BAILLIAGE OF OCCITANIE
A major objective of the Bailliage of Occitanie is the transmission of the Languedoc gastronomic and wine heritage to the youngest, as well as the highlighting of its restaurateurs and “rôtisseurs”, not to forget the producers, artisan fishermen and breeders of the Languedoc. With its sea, mountains, valleys, and plains, Occitanie is steeped in a particularly complete culinary heritage, which allows traditional restaurants to perpetuate the recipes of the dishes that we all love, like the trinity of the emblematic cassoulets of Castelnaudary, Toulouse, or Carcassonne, and the rising nuggets of gastronomy to create and bring - for the greatest happiness of all - new culinary experiences for a joy of living and a joy of cooking, like the sea from Collioure to Aigues-Mortes passing of course by Sète dear to the poet Paul Valéry, "toujours recommencé --- always recreated".
The Grand Chapitre de France will be held in Occitanie, more precisely in the walled city of Carcassonne during 2023.
